Kale Slaw

This kale slaw is full of crunch and flavor!


  • 1 head kale
  • 1 apple, julienned
  • 1 carrot, shredded
  • chopped pistachios, toasted
  • salt and pepper to taste
  • For the Dressing:
  • 3 tablespoons olive oil
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon dijon mustard
  • 1 teaspoon honey


  • 1. Remove stems from kale. Thinly slice leaves and place in a large bowl with the carrot. Make a dressing by blending 3 Tbsp. olive oil, 2 Tbsp. apple cider vinegar, 1 Tbsp. Dijon mustard, and 1 tsp. honey, season with salt and pepper. Toss in the dressing and let sit overnight. Add the apples and nuts. Let stand at room temperature for at least 30 minutes before serving.
