Jamaican Shrimp

Nutritional Information

This is a light and refreshing recipe that combines shrimp, mangoes and peppers.

Ingredients

  • 1 1/2 pounds peeled shrimp
  • 1 mango, peeled and chopped
  • 1/4 cup finely chopped red bell pepper
  • 1/4 cup sliced green onion
  • 2 tablespoons lime juice
  • 1/2 teaspoon Allspice, Ground
  • 1/2 teaspoon Thyme Leaves
  • 1/4 teaspoon Red Pepper, Crushed
  • 1/4 teaspoon salt
  • coco bread, see recipe

Directions

  • 1. Preheat the Egg to 400º using direct heat and a cast iron grate. Grill the mango, bell pepper and onion. Grill the shrimp on both sides until cooked throughout. Remove everything from the grill and chop. Mix together with the remaining ingredients. Season to taste and serve
