These chicken drummies are tossed in Jamaican Firewalk; a rub made by Dizzy Pig. Any rub can be used, but this rub has the perfect balance of flavor and heat.


  • Basic Brine, see recipe
  • 1 1/2 pounds chicken drumsticks, trimmed
  • Dizzy Pig Jamaican Firewalk rub, as desired


  • 1. Brine the chicken for 1 hour. Remove from the brine, rub with the seasoning, and refrigerate overnight.
  • 2. Preheat the EGG to 400º using indirect heat and a cast iron grate. Cook for 40 minutes or until an internal temperature reaches 170º.
