Ingredients

  • 3 pounds ground chuck
  • olive oil, as needed
  • 2 large red onion
  • 2 tablespoons white wine vinegar
  • 4 large gherkins
  • 8 challah buns, see recipe
  • 8 slices bacon, rendered
  • yellow mustard, as desired
  • cheddar cheese, as desired
  • ketchup, as desired
  • For the Burger Sauce
  • 8 tablespoons mayo
  • 1 head lettuce
  • 4 tablespoons ketchup
  • 4 teaspoons tabasco
  • 4 teaspoons worcestershire sauce

Directions

  • 1. To dress the burgers: Finely slice the red onion, then dress in a bowl with the vinegar and a pinch of sea salt. Slice the gherkins and halve the buns. Finely chop the lettuce and mix with the rest of the burger sauce ingredients in a bowl, then season to taste.
  • 2. Divide the burger meat into 8 even patties. Season with salt and pepper. Preheat the Egg to 425º using a cast iron grate and direct heat. Grill the burgers until desired temperature.
  • 3. Let burgers rest for a few minutes before serving with the remaining ingredients, building burgers as desired.
