Herb Marinated Skirt Steak

Nutritional Information

The fresh herbs used in the marinade allows the natural flavor of the steak to stand out.


  • 44 ounces skirt steak, trimmed of excess fat
  • 1/8 cup fresh Thai basil
  • 1/8 cup fresh cilantro
  • 1 sprig rosemary, leaves pulled off the stem
  • 1 1/2 cups white balsamic vinegar
  • 1/2 cup soy sauce
  • 2 tablespoons granulated garlic
  • 2 tablespoons granulated onion
  • 1 tablespoon salt
  • 1 tablespoon ground black pepper


  • 1. In a food processor, combine all the herbs. Blend until broken down, almost to a paste-like consistency.
  • 2. Place herbs, vinegar, soy sauce, garlic, onion, salt and pepper into a ziplock bag. Shake until all ingredients are thoroughly combined.
  • 3. Add the skirt steak to the ziplock bag, making sure to squeeze all the air out of the bag. Let marinate 1 -2 hours.
  • 4. Grill skirt steak at 350 degrees on direct heat until the internal temperature reaches 145 degrees. Remove the steak from the EGG and let rest 5 minutes before slicing.

Variation: For Steak Class on 10/21 we used hanger steak rather than skirt steak. Follow directions above.
