Herb and Nut Crackers

Nutritional Information

The crackers are easy and great for people with gluten sensitivity.


  • 2 cups Nuts, cashews, pistachios and/or pecans
  • 2 Tbsp. yeast
  • .5 tsp. pepper
  • .75 tsp salt
  • 2 tsp herbs de provence
  • 1 ea egg
  • 1.5 Tbsp. Water
  • Seeds to garnish , sesame, poppy,etc


  • 1. Preheat Egg to 300ºF with plate setter for indirect heat. Line sheet tray with parchment paper.
  • 2. Coarsely grind nuts and seeds in food processor until just beginning to clump. Not too small. You don’t want to make paste.
  • 3. Pour into mixing bowl and crumble with fingers add remaining dry ingredients. Taste for seasoning.
  • 4. Add egg and stir to combine.
  • 5. Roll out as thin as possible without tearing dough. Sprinkle with seeds and add to sheet tray. Bake for 20-30 minutes.
