Herb and Garlic Flank Steak with Pan Roasted Grapes

The combination of vinegar and sweetness from the grapes compliments the steak nicely.


  • 2 teaspoons fresh thyme
  • 2 teaspoons fresh rosemary
  • 1 large garlic clove
  • 1 1/2 teaspoon Kosher salt
  • 3/4 teaspoon Freshly ground pepper
  • 32 oz flank steak
  • 2 tablespoons olive oil
  • 3 cups assorted whole grapes
  • 2 shallots
  • 1 to 2 tbsp. white balsamic vinegar
  • 1/2 cup freshly crumbled blue cheese


  • 1. Combine first 5 ingredients. Rub steak with herb mixture.
  • 2. Preheat the Egg to 500ºF with cast iron grate for direct heat.
  • 3. Grill the steaks to desired temperature and let rest.
  • 4. Place a cast iron pan on the Egg and preheat for five minutes. Add the olive oil and the grapes and cook for 2 minutes.
  • 5. Next add the white balsamic and cook for another 2 minutes.
  • 6. Slice the flank steak and slice thin across the grain.
  • 7. Spoon the grapes with the liquid from the pan over the steak and top with blue cheese.
