Ham and Egg Sandwich

These simple yet delicious breakfast sandwiches are perfect for breakfast or dinner!


  • 8 english muffins
  • butter, as needed
  • 4 eggs, scrambled
  • 2 ounces pepperjack cheese, shredded
  • 8 ounces ham
  • cherry wood, for smoking if desired
  • Dizzy Pig Pineapple Head Rub, as desired
  • Chipotle Cream Cheese:
  • 3 ounces chipotle in adobo sauce
  • 1/4 pound cream cheese, room temperature
  • 4 ounces mexican crema
  • 1/4 cup chives, finely cut
  • 1 lime, juiced
  • ½ Tablespoon kosher salt
  • ½ Tablespoon sugar


  • 1. Combine the ingredients for the cream cheese in a food processor or kitchen aid. Process until well blended and season to taste.
  • 2. Rub the ham with the Pineapple Head seasoning, refrigerate for a few hours. Preheat EGG to 225º using indirect heat. Smoke the ham with the cherry wood until the internal temperature reaches 165º. Let the ham rest for 30 minutes before slicing. Bring your EGG to 350º and preheat a paella pan. Add the eggs to the pan along with the pepperjack cheese. Cook until the eggs are cooked throughout. Keep warm.
  • 3. Slice the english muffins and spread with some butter. Preheat the EGG to 400º using direct heat and a cast iron grate. Grill the english muffins until browned and keep warm.
  • 4. Spread the english muffins with the cream cheese, top with the ham and the eggs and serve.
