Grilled Vegetables and Proscuitto Pizza

Nutritional Information

This pizza has a fig jam sauce and blue cheese that compliment the grilled vegetables and prosciutto.

Ingredients

  • 1 each Basic Pizza Dough recipe
  • For the Fig Sauce:
  • 8 ounces dried figs
  • 3 ounces red wine, any kind you have on hand
  • 2 ounces honey
  • 1 ounce fresh lemon juice
  • For the Toppings:
  • 2 ounces grilled butternut squash
  • 1 1/2 ouinces grilled leeks
  • 2 ounces blue cheese crumbles
  • 2 ounces proscuitto, thinly sliced

Directions

  • 1. Prepare the Basic Pizza Dough Recipe as instructed.
  • 2. For the Fig Sauce;
  • 3. In a heavy-bottomed sauce pan, combine the dried figs, wine, honey and lemon juice. Cook over medium heat until the figs become rehydrated and soft, about 5-10 minutes.
  • 4. Remove sauce pan from heat and place mixture in a food processor. Process until you get a thick smooth jam. It will not be completely smooth due to the seeds from the figs. If the jam is too thick, add more red wine until you reach the desired consistency. Set aside.
  • 5. Assembling the Pizza:
  • 6. Roll the pizza dough out to your desired thickness.
  • 7. Spread 2-3 ounces of the fig jam evenly over your dough. You can choose to do the entire round or leave a 1/2 inch border around without sauce.
  • 8. Evenly spread the butternut squash, leeks, blue cheese and proscuitto (in that order) on your pizza.
  • 9. Follow cooking directions as instructed on the Basic Pizza Dough Recipe.
