Grilled Tuna Pastrami

Think pastrami, but better....


  • 4 pounds albacore tuna , (skinned, bloodline trimmed)
  • 4 tablespoons fresh coarsely ground black pepper
  • 2 tablespoon coriander powder
  • 1 teaspoon mustard powder
  • 1 tablespoon brown sugar
  • 1 tablespoon paprika
  • 2 teaspoons garlic powder
  • 2 teaspoons onion powder
  • smoking wood, as desired


  • 1. Rub. Make the rub by blending together all the spices. Rinse the fish, pat it dry with paper towels, coat it with a thin layer of cooking oil, apply the rub liberally and press it into the surface to help it adhere.
  • 2. Preheat the EGG to 425° for direct heat and a cast iron grate. Grill the tuna 2-3 min a side flipping once, and pull off the EGG and let rest 5-10 min. Flake or slice to serve.
