Grilled Squash and Black Bean Chili

This vegetarian chili is delicious enough that even meat lovers enjoy it!

Ingredients

  • 2 tablespoons olive oil
  • 1 small butternut squash, peeled, seeded and cut into 1
  • Kosher salt and freshly ground black pepper
  • 1 large yellow onion, peeled and halved
  • 1 yellow and red bell pepper, seeded and quartered
  • 1 tablespoon grnd cumin ground cumin
  • 1 tablespoon chili powder
  • 1 tablespoon paprika
  • 1 teaspoon dried oregano
  • 2 cloves garlic, minced or grated with a microplane grater
  • 1/2 can chipotle chilies in adobo
  • 2 cups low sodium vegetable broth
  • 2 15 ounce cans black beans, drained and rinsed
  • 4 scallions, white and light green parts only
  • 1 cup shredded vegan ore regular cheddar or Monterey Jack cheese for serving
  • 2 avocado, pitted
  • sour cream, for garnish as desired
  • hickory wood, for smoking

Directions

  • 1. Preheat the EGG to 400º using a cast iron grate and direct heat. Grill the squash, onion and peppers until char marks form. Remove from the grill and dice into small pieces.
  • 2. Convert the EGG to indirect heat using the smoking wood and with a cast iron dutch oven. Heat the oil in the dutch oven until shimmering. Add the butternut squash and season with salt and pepper. Add the onion and peppers, stirring and cooking until softened, about 3 minutes. Add the cumin, oregano and garlic and cook until aromatic, about 1 minute.
  • 3. Add the chipotle peppers, stock, and beans and cook until the squash has finished cooking and the flavors have melded about 45 minutes. Mash the beans gently with a wooden spoon against the side of the pot to thicken, then season with salt and pepper. If a smoother consistency is desired you can use a stick blender or a food processor to achieve this. Once consistency is achieved, season to taste with salt and pepper. Ladle into bowls and serve with scallions, grated cheese, sour cream and avocado.
