Grilled Skirt Steak with Broccoli

This recipe features Honey Hog Hot Meat Church rub. The rub gives it a slightly sweet and spicy flavor and is served with a delicious glazed broccoli.

Ingredients

  • 2 1/2 pounds trimmed skirt steak
  • Honey Hog Hot (Meat Church Rub), as desired
  • For the Broccoli:
  • 5 ounces butter, softened
  • 2 limes, juiced and zested
  • 1-2 tablespoons Tabasco Chipotle Sauce or hot sauce of choice
  • 1 tablespoon honey
  • 2 cloves garlic, finely grated on a Microplane
  • salt and pepper, to taste
  • 40 ounces broccoli, stems trimmed, cut into large florets
  • Olive oil, for drizzling
  • 1 cup crumbled queso fresco

Directions

  • 1. For the Broccoli: In a bowl, stir the softened butter with the lime zest, lime juice, Tabasco, honey and garlic and season lightly with salt. Preheat the EGG to 425 using direct heat and a cast iron grate. Drizzle the broccoli florets very lightly with olive oil and season with salt. Grill, turning the florets occasionally, until crisp-tender and lightly charred, about 8 minutes. Transfer the broccoli to a platter and toss with the lime butter. Garnish with the queso fresco and serve.
  • 2. Rub with Honey Hog Hot 3-4hrs before cooking. Preheat EGG to 475, using direct heat and a cast iron grate.
  • 3. Lightly spray steaks with pan spray and grill over direct heat, 2 min a side. Pull off and let rest 10 min, slice against the grain and serve.
