Grilled Sirloin with Roasted Garlic Mustard

The roasted garlic mustard is the perfect finish for grilled beef!


  • 2 1/2 pounds sirloin steak
  • rub of choice, as needed
  • 8 cloves garlic
  • 1 1/2 teaspoons extra-virgin olive oil
  • Kosher salt and freshly ground black pepper
  • 1/4 cup whole grain mustard
  • 1 tablespoon olive oil
  • 3/4 teaspoon chopped fresh marjoram, or other fresh herb


  • 1. Rub the steak with the rub and refrigerate overnight.
  • 2. Heat the egg to 375°F using indirect heat. Put the garlic cloves on a large piece of aluminum foil and drizzle with the oil. Sprinkle with a pinch of salt and pepper. Wrap the foil around the garlic, forming a pouch, and bake until completely soft and golden, about 20-30 minutes.
  • 3. Unwrap the garlic and let it cool enough to handle. Place the cloves into a small bowl. Add the mustard, herbs and remaining olive oil and mash together with a fork until smooth. Season to taste and set aside.
  • 4. Preheat EGG to 425º using direct heat and a cast iron grate. Grill for 10-15 minutes or until desired temperature is achieved. Let rest for 15 minutes and serve.
