Grilled Potato and Bacon Salad

This recipe combines potatoes, onions, bacon and blue cheese making it perfect alongside any bbq dish!


  • 1 pound bacon, sliced thinly
  • 3 red onions, peeled and quartered
  • 1/4 cup extra virgin olive oil
  • Kosher salt and freshly ground black pepper
  • 3 1/2 pounds small new potatoes (about 1 1/2 inches in diameter), scrubbed
  • 1/2 cup mayonnaise
  • 1/2 pound blue cheese, crumbled


  • 1. Render the bacon until crisp. Drain on paper towels and set aside.
  • 2. Preheat the Egg to 425º using direct heat and a cast iron grate. Toss the onions in some of the oil. Grill over direct until slightly charred and slightly softened. Cut the grilled onions into 1/2-inch pieces.
  • 3. Cut the potatoes in half. In a large bowl, toss the potatoes with the remaining 3 tablespoons of olive oil and season with salt and pepper. Grill the potatoes over direct heat, turning once, until they are tender and browned, about 5-10 minutes depending on their size. In a large bowl, mix the mayonnaise with the blue cheese. Add the bacon, onions and potatoes and toss to coat. Season to taste and serve!
