Grilled Paella

Be sure to not stir the rice when making paella to ensure the delicious crust forms!

Ingredients

  • 6 cups chicken stock
  • 2 1/2 pounds large shrimp, shelled and deveined, shells reserved
  • 48 pei mussels, beard removed
  • Pinch of saffron threads, crumbled
  • 1/2 lime
  • 2 tablespoons extra-virgin olive oil
  • 8 ounces fresh chorizo, sliced 1/2 inch thick
  • 2 ripe tomatoes, finely chopped
  • 2 garlic cloves, minced
  • 1 teaspoon smoked paprika
  • 24 ounces arborio rice
  • 5 ounces roasted red peppers, cut into strips
  • 2 tablespoons chopped parsley, for garnish

Directions

  • 1. In a large saucepan, combine the stock with the shrimp shells and saffron. Squeeze in the lemon to the saucepan and bring to a simmer. Remove from the heat and let stand for 10 minutes. Strain the broth and discard the solids.
  • 2. Preheat the Egg to 375º using indirect heat and a cast iron dutch oven. Add the chorizo, and close the lid. Cook until the chorizo is sizzling and lightly browned, about 5 minutes. Add the tomatoes, garlic and smoked paprika and cook, stirring once or twice, until the tomatoes are softened, about 5 minutes. Add the rice and stir to coat with the tomato mixture. Continue cooking for a few minutes until the rice is toasted. Stir in the shrimp broth and cook until half of the broth has been absorbed, about 10 minutes. Add the mussels with the base of them down (so when they open they release their juices into the rice). Cook for a few minutes until a few of them begin to open. Add the shrimp. Cover the dutch oven and cook until the rice is al dente and has formed a crust on the bottom and side of the skillet and the seafood is cooked, about 8 minutes. Fold in the peppers and parsley and cook just until heated through. Season to taste and serve immediately.
