Grilled Oysters

Nutritional Information

These oysters are quickly grilled over direct heat and served with an herbed burre blanc.


  • 1 shallot, peeled and minced
  • 1/2 cup white wine
  • 1/3 cup heavy cream
  • 8 tablespoons cold butter
  • 1 tablespoon tarragon, chopped
  • 1 tablespoon parsley chopped
  • salt, to taste
  • 12 oysters, unshucked


  • 1. Put shallot and wine into a small saucepan and simmer over medium heat until reduced by half, 6–8 minutes. Add the cream, and reduce by half again.
  • 2. Remove pan from heat. Whisk in butter, 1 tbsp. at a time. Return pan briefly to lowest heat. Add the butter. Whisk in tarragon, and parsley and add salt to taste.
  • 3. Preheat the EGG to 400º using direct heat and a cast iron grate. Place the shucked oysters on a grill safe pan. Grill the oysters for about 3 minutes or until the liquid in the oysters begins to bubble. Serve with sauce and enjoy!
