Grilled Kale Slaw

This is a great alternative to regular creamy cole slaw.

Ingredients

  • 1 head kale, halved
  • 1 apple, peeled, cored and quartered
  • 1 carrot, shredded
  • raisins (optional)
  • slivered almonds, toasted
  • extra virgin olive oil, as needed
  • lemon juice, to taste
  • salt and pepper, to taste
  • For the Dressing:
  • 3 tablespoons olive oil
  • 2 tablespoons apple cider vinegar
  • 1 tablespoons dijon mustard
  • 1 teaspoon honey

Directions

  • 1. Preheat the EGG to 400º using direct heat and a cast iron grate. Grill the apples for about 2 minutes per side or until char makes form. Remove from the grill and julienne (cut into thin strips).
  • 2. Remove stems from kale. Thinly slice leaves and place in a large bowl with the apple, carrot, raisins (optional), and toasted slivered almonds. Drizzle mixture with extra-virgin olive oil, fresh lemon juice, kosher salt, and freshly ground black pepper; toss to coat. Make a dressing by blending 3 Tbsp. olive or grapeseed oil, 2 Tbsp. apple cider vinegar, 1 Tbsp. Dijon mustard, and 1 tsp. honey. Let stand for at least 30 minutes before serving.
