Grilled Garlic and Basil Pork Tenderloin

This grilled pork tenderloin is accompanied with a roasted corn coulis. Recipe by Dustin Feliciana


  • For Pork Tenderloins:
  • 4 each pork tenderloins, trimmed of excess fat, silverskin removed
  • 14 each large fresh basil leaves
  • 11 each garlic cloves
  • 1 teaspoon ground black pepper
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon cumin
  • 1/2 teaspoon red pepper flakes
  • 2 ounces olive oil
  • to taste salt
  • For Roasted Corn Coulis:
  • 4 each ears of corn, roasted
  • 1 teaspoon fresh basil, finely chopped
  • 1 cup milk or heavy cream
  • to taste salt
  • to taste ground black pepper


  • 1. For Pork Tenderloin:
  • 2. Preheat EGG to 425° using indirect heat and a cast iron grate.
  • 3. Combine spices and basil with olive oil in blender to create a marinade. Place tenderloin in marinade overnight. Wipe marinade off so no excess oil remains. Grill turning every 3-4 mins until internal temp of 140 is reached. Rest for 10 mins before slicing.
  • 4. For Roasted Corn Coulis:
  • 5. Remove corn from ears and mix remaining ingredients. Hit with an emulsifier blender until smooth and send through a strainer to remove any large pieces. Drizzle corn coulis over tenderloin and serve.
