Grilled Fish with Dizzy Pig Rub

Nutritional Information

This is a very basic recipe for grilling fish. When selecting a fish, be sure to choose one with a firmer texture to ensure it will be able to withstand direct heat.


  • basic brine, see recipe
  • 1 pound seasonal fish of choice
  • Dizzy Pig rub of choice


  • 1. Brine the fish for no longer than 1 hour depending on the portion size of the fish. (The smaller size they are cut into the less time you brine.) Remove the fish from the brine and refrigerate for 1 hour uncovered to form a pellicle.
  • 2. Remove from the refrigerator and rub generously with the rub. Preheat the Egg to 400º using direct heat and a cast iron grate. Grill the fish until just cooked throughout. Season to taste with more rub as needed before serving.
