Goat Cheese Macaroni and Cheese

The goat cheese gives this mac and cheese dish a delicious tang!


  • 1/2 pounds penne
  • 1 1/2 cups heavy cream or half-and-half
  • 3 tablespoons finely chopped sweet onion
  • 2 each garlic cloves, minced
  • 5 ounces goat cheese
  • 3 ounces sharp white cheddar, shredded
  • 1/2 cup freshly grated Parmigiano-Reggiano
  • 2 tablespoons sour cream
  • 3/4 teaspoon lemon zest
  • 1 1/2 teaspoons chopped fresh thyme
  • 1 extra large egg yolk
  • to taste salt and white pepper (or freshly ground black pepper)


  • 1. Cook the macaroni as directed on the box. Set aside.
  • 2. Preheat EGG to 350 degrees F, using indirect heat and a stainless steel grate.
  • 3. Grease a standard muffin pan and set aside.
  • 4. In a large bowl, mix together the sweet onion, garlic, goat cheese, sharp white cheddar cheese, Parmigiano-Reggiano cheese, sour cream, lemon zest, the thyme and the egg yolk. Slowly add the heavy cream or half-and-half.
  • 5. Add the cooked macaroni and toss to combine thoroughly. Season to taste with salt and the white pepper.
  • 6. Divide the macaroni mixture evenly among the muffin pan.
  • 7. Bake on the EGG 20-25 minutes or until the tops are golden brown. Remove from the EGG and let sit 5 minutes before removing from the muffin pan. Serve hot.
