Ginger Cucumbers and Peppers

A spicy, cool, refreshing salad for any hot summer party.


  • 1/4 c. olive oil
  • 1/4 c. rice wine vinegar
  • 1 tablespoon Finely grated ginger
  • 2 teaspoons sugar
  • 3/4 teaspoons red pepper flakes
  • Kosher salt
  • 2 lg. cucumbers, halve lengthwise, seeded, and sliced
  • 1/2 lb. mini sweet peppers
  • 1/2 red onion, chopped
  • 1/3 c. torn basil


  • 1. Combine oil, vinegar, ginger, sugar, and pepper flakes in a bowl. Season with salt. Add cucumbers, onion, basil, and toss to combine. Chill 15 minutes.
