German Potato Salad

This recipe for german potato salad has the perfect balance of sweet and tangy.


  • 1 pound Yukon gold potatoes, quartered
  • 1/4 pound thick-cut bacon
  • 1/2 cup finely chopped onion
  • 1/6 cup white vinegar
  • 2 tablespoons sugar
  • 1 1/2 teaspoons coarse ground mustard
  • 1/2 teaspoon salt
  • 1 tablespoon minced chives, for garnish


  • 1. Preheat grill to 425º using indirect heat. Toss the potatoes in olive oil, salt and pepper, and roast until fork tender.
  • 2. Cook the bacon in a large skillet over indirect heat. Once crisp, place on a paper towel-lined plate and crumble into small pieces. Pour off the rendered fat, reserving 1/4 cup in the pan. Add the onion. Cook until translucent and just beginning to brown, about 4 to 5 minutes.
  • 3. Whisk in the vinegar, sugar, mustard, and salt and stir until thick and bubbly. Add the quartered, cooked potatoes and toss to coat. Top with the crumbled bacon and garnish with the chives. Serve warm.
