Fruit and Herb Shortcake

Fresh herbs give this shortcake recipe a nice twist!


  • 4 tablespoons unsalted butter, melted
  • 1 sprig fresh herbs, such as basil, thyme, or tarragon
  • 1 cup cake flour
  • 1 tablespoon baking powder
  • 1 teaspoon kosher salt
  • 1 cup all-purpose flour, plus more for surface
  • 2 teaspoons sugar, plus more for sprinkling
  • 1 1/4 cups heavy (whipping) cream, chilled
  • 1/4 cup bourbon


  • 1. Shortcake and assembly: Preheat egg to 400° using indirect heat.
  • 2. Whisk cake flour, baking powder, salt, all-purpose flour, herbs and sugar in a large bowl. Mix cream and bourbon together. Drizzle chilled cream mixture over and mix gently until dough holds together.
  • 3. Turn out dough onto a lightly floured surface and knead into a shaggy ball, being careful not to overwork. Form into a square 1/2” thick. Cut into 2 inch pieces. Place pieces on a parchment-lined rimmed baking sheet and brush with some melted butter and sprinkle with sugar.
  • 4. Bake until shortcake is cooked and edges are golden brown, about 10-15 minutes.
  • 5. Brush shortcake with remaining melted butter. Transfer to a wire rack and let cool before serving.
