French Dip Sandwiches

Nutritional Information

Several types of beef can be used for this recipe, just make sure you have the Au Jus to go with it!

Ingredients

  • 1/4 cup brown sugar
  • 2 tablespoons seasoned salt
  • 2 tablespoon paprika
  • 2 tablespoons pepper
  • 1/3 cup dizzy pig raging river seasoning
  • bourbon wood chunks
  • 5 pounds eye of round
  • 16 sub rolls
  • Au Jus, see recipe

Directions

  • 1. Mix the dry ingredients thoroughly in a medium bowl. Spread the rub over the raw eye of round, working it into every crack. Marinate like this overnight.
  • 2. Preheat the EGG to 225º using indirect heat. Smoke the eye of round until an internal temperature reaches 130º about 1 1/2- 2 hours. Remove from the grill, put it in a grill safe pan with the au jus and continue to cook for 30 minutes. Serve on sandwiches.
