Focaccia Bread

Nutritional Information

This bread is so versatile that it can be used on your charcuterie platter or for your sandwiches.


  • 13 1/2 ounces warm water
  • 4 grams yeast
  • 24 ounces all purpose flour
  • 1/4 teaspoon kosher salt
  • 1 ounce olive oil
  • 1/4 ounce fresh rosemary, minced
  • 1/4 ounce fresh basil, minced
  • 2 garlic cloves, minced
  • as needed butter, melted


  • 1. In the bowl of an electric mixer, combine the water and yeast. Lightly whisk together and let stand for 2 minutes.
  • 2. Add the olive oil, salt and flour. Using the dough hook attachment, combine the dough. Mix on medium speed for 5-7 minutes or until the dough begins to pull away from the bowl. The dough should look smooth and elastic.
  • 3. Turn the dough out onto a clean work surface, form the dough into a ball and place it in an oiled bowl, turn to coat the entire ball with oil so it doesn't form a skin. Cover with plastic wrap and let rise in a warm place until doubled in size, about 45 minutes.
  • 4. Preheat EGG to 350 degrees F using indirect heat. Grease a small disposable aluminum pan and set aside.
  • 5. In a small bowl, combine together the rosemary, basil and garlic. Set aside.
  • 6. Take your dough and dump it into the prepared aluminum pan. Punch down and stretch the dough out to fit the pan.
  • 7. Generously coat with melted butter, using your fingertips, dimple the dough all over. Spread the herb-garlic mixture evenly over the top. Cover with plastic wrap and let rise in a warm place, until doubled, about 45 minutes. Bake for 30 minutes or until the bottom is browned and the bread springs back when you touch it. Serve as desired.

In our Pizza class on 5/30/17 and 5/31/17, we omitted the kalamata olives, parmesan and rosemary and substituted 1/3 cup capers and 1 lemon zested and juiced.
