Ember Potatoes

Nutritional Information

This is a unique cooking method that has you cook the potatoes directly on the coals.

Ingredients

  • 3 pounds new potatoes
  • kosher salt and pepper, to taste
  • 1 bunch scallions, trimmed
  • 2 cups sour cream

Directions

  • 1. Preheat the Egg to 350º using indirect heat. Roast potatoes for 40 minutes until tender.
  • 2. Remove plate setter and grate. Set the potatoes in the embers of a dying fire and close the lid. Cook until the skins are blistered, about 6 minutes. Remove them from the coals and brush off any ash.
  • 3. Combine the scallions and sour cream with a pinch of salt in a food processor. Purée until the mixture is smooth. Season to taste. Serve potatoes with cream.
