Duck Ham

This recipe is very time consuming, but the results are definitely worth it!


  • Herb Rub:
  • 4 tablespoons thyme
  • 4 tablespoons oregano
  • 4 tablespoons cumin
  • 4 tablespoons paprika
  • 4 teaspoons onion powder
  • 4 teaspoons salt
  • 4 teaspoons pepper
  • 6 duck breasts, moscovi
  • 6 tablespoons dijon mustard
  • 1 1/2 cups brown sugar
  • 1 1/2 cups white sugar
  • cherry wood, for smoking, as desired


  • 1. Combine all the ingredients for the herb rub. Rub the duck with this mixture. Refrigerate for 4 hours.
  • 2. Combine the 2 sugars until an even mixture forms. Coat the duck evenly with the mustard, then pack the breasts in a container layering with the sugars, making sure that all sides of the duck are touching sugar. Cover and refrigerate for 5 days.
  • 3. Preheat EGG to 225º using indirect heat and wood chunks if desired. Smoke until an internal temperature reaches 160º. Let rest 10 minutes, slice and serve.
