Duck Fat Olive Oil Cake

This recipe uses duck fat in place of blended oil, giving it a richer, deeper flavor.


  • 3 cups all purpose flour
  • 4 teaspoons baking powder
  • 1 teaspoon kosher salt
  • 2 cups sugar
  • 6 whole egg
  • 4 teaspoons orange zest
  • 4 teaspoons lemon zest
  • 1/2 cup low fat milk
  • 1/2 cup duck fat
  • 1 cup olive oil
  • sifted powdered sugar, as desired for garnish
  • 8 pears, peeled and cored
  • 1 cup orange juice
  • 4 cups apple juice
  • 1 cup cider vinegar
  • 1/2 cup honey, or to taste
  • 2 teaspoons cinnamon, or to taste


  • 1. To make pears:  In a large sauce pot combine the orange juice, apple juice and cider vinegar.  Add the honey and cinnamon and bring to a boil.  Reduce to a simmer and add the pears.  Cook the pears until they are fork tender.  Remove from the juice and let cool.  Once cool enough to handle, slice or dice, however desired.  Pears can be stored in the liquid once it is cool.  Serve on top of the cake.
  • 2. To make the cake: Preheat the grill to 350 degrees F using indirect heat. Lightly oil an 8-inch-diameter cake pan. Whisk the flour, baking powder, and salt in a medium bowl to blend. Using an electric mixer, beat the sugar, eggs, and zests in a large bowl until pale and fluffy. Beat in the milk. Gradually beat in the oil and fat. Add the flour mixture and stir just until blended. Transfer the batter to the prepared pan. Place cake pan on baking pan to collect any possible spills.
  • 3. Bake until a tester inserted into the center of the cake comes out with moist crumbs attached, about 35 minutes. Transfer to a rack and cool for 15 minutes. Remove cake and place on serving platter, top side up. Sift powdered sugar over the cake and top with sliced poached pears
