Dessert Burgers

Nutritional Information

These burgers will blow your mind! They are made with cinnamon rolls, pineapple, goat cheese and bacon.


  • 1 batch brioche dough, see recipe
  • 1 1/2 cup brown sugar
  • 1 1/2 tablespoon cinnamon or to taste
  • 1 teaspoon salt
  • 2 tablespoons flour
  • 12 ounces goat cheese
  • honey, as desired
  • cinnamon, as desired
  • 12 slices pineapple
  • 12 ounces bacon, rendered
  • 12 ounces strawberries, sliced
  • balsamic, as needed


  • 1. Follow the brioche recipe as stated to make a dough. Proof the dough overnight as the dough states.
  • 2. Remove the dough from the refrigerator and let come to a little above room temperature. A specific temperature is not needed, you just need the dough to warm up a little to make it easier to work with the dough.
  • 3. Roll the dough out into a rectangle. Combine the brown sugar, cinnamon, flour, butter and salt until a mixture forms. Sprinkle the mixture evenly over the dough except for 1
  • 4. Refrigerate for 1 hour. Remove from the refrigerator and slice into 12 even slices.
  • 5. Preheat the EGG to 350º using indirect heat. Space the rolls out on a grill safe baking sheet and bake for about 15-20 minutes or until lightly browned and cooked throughout.
  • 6. For the goat cheese: Mix the honey, cinnamon and cheese until desired sweetness is achieved.
  • 7. Grill the pineapple until char marks form over direct heat preheated to 400º using a cast iron grate.
  • 8. Slice the cinnamon roll in half lengthwise. Top with goat cheese, bacon, sliced pineapple and strawberries. Top with the other half and serve.
