Deep Dish Pizza Dough

This dough is great if you like a chewy pizza crust.


  • 14 ounces bread flour
  • 10 grams kosher salt
  • 4 grams instant yeast
  • 8 ounces warm water
  • 8 grams olive oil


  • 1. In the bowl of an electric mixer, combine the four, salt, yeast, water and olive oil. Mix with the paddle attachment until no dry flour remains. Turn the dough out onto a clean work surface, lightly dusted with bread flour. Knead the dough until smooth, about 3 minutes. Knead into a ball and place in a greased bowl and cover with plastic wrap. Let sit and double in size, about 45 minutes.
  • 2. Preheat EGG to 350 degrees F using indirect heat.
  • 3. Grease a small disposable aluminum pan with plenty of melted butter, making sure to grease the sides as well. Dump the dough into the pan and evenly press out along the pan. Top with desired sauce (no more than 6 ounces) and cooked toppings (no more than total weight of 20 ounces). Cover with plastic wrap and let sit 15 minutes.
  • 4. Bake for 35 minutes or until internal temperature reaches 210 degrees F and any cheese is melted and bubbly. Remove from the EGG and let sit 5 minutes prior to cutting. Serve hot.
