Crème Anglaise

Nutritional Information

Créme Anglaise is a dessert sauce that can be flavored with just about any spice or extract.


  • 1 cup milk, can also use cream or flavored milks such as coconut
  • 4 large egg yolks
  • 3 tablespoons sugar
  • 1 tablespoon vanilla or other flavored extract, or alcohol
  • *pecan wood, if a smokey flavor is desired


  • 1. Pour milk into a heavy medium saucepan. Bring to simmer. Remove from heat.
  • 2. Whisk egg yolks and sugar in medium bowl to blend. Gradually whisk hot milk into yolk mixture. Return custard to saucepan. Stir over low heat until custard thickens and leaves path on back of spoon when finger is drawn across, about 5 minutes (do not boil). Strain sauce into bowl. Add extract, cover and chill. (Can be made 1 day ahead.)
