Creamy Polenta

Nutritional Information

This traditional Italian side dish, is made with cream, stock and butter and is very versatile.


  • 2 2/3 cups chicken stock, or vegetable stock
  • 2/3 cups milk
  • 2/3 cups heavy cream
  • 2 teaspoons salt
  • 1 tablespoon thyme or other herbs of choice, chopped
  • 2 ounces cheese of choice
  • 1/3 stick butter
  • 1 cup polenta


  • 1. Bring liquid to a boil and add salt. Slowly add polenta and whisk. Add herbs, cheese and butter and continue whisking and cooking until cooked and thickened.
