Creamy Leek and Swiss Chard

Nutritional Information

Grilling the leeks and swiss chard adds a lot of flavor to this dish.

Ingredients

  • 3 lbs. Swiss chard (large stems discarded)
  • 3 tablespoons extra-virgin olive oil
  • 6 medium leeks (white & tender green parts only, sliced 1/4 inch thick)
  • 3 cloves garlic (minced)
  • 6 tablespoons unsalted butter (more to grease pan)
  • 2/3 cup all-purpose flour
  • 1 quart whole milk
  • 1/2 cup Gruyere cheese (shredded)
  • 1/2 cup Parmigiano-Reggiano cheese (freshly grated)
  • 1/4 teaspoons nutmeg (freshly grated)
  • 3 tablespoons olive oil
  • Kosher salt and freshly ground black pepper (to taste)

Directions

  • 1. Make roux by adding butter to hot pan and whisk in the flour cook on medium low for five minutes.
  • 2. Grill the leeks and the chard over direct heat with the cast iron grate. Slice the the leeks and chop swiss chard.
  • 3. Preheat the Egg to 350ºF with platesetter and dutch oven for indirect heat. Add butter and garlic and saute. Add cream and bring to a boil then add roux and bring back to boil. Whisk in the cheese until incorporated. Fold in grilled leeks and chard and allow to warm through.
