Cowboy Steak

Nutritional Information

In this recipe the steak is grilled directly on the charcoal, then rested for about 20 minutes. This gives it a very rustic flavor and is a cool trick to show your guests.


  • 1 pound beef tenderloin, trimmed and butterflied
  • kosher salt and pepper, as needed


  • 1. Season the steak with the salt and pepper as desired.
  • 2. Preheat the EGG to 400º using direct heat and no grate. Once the EGG is preheated to 400º take a piece of paper and fan away any dust that may be on the charcoal.
  • 3. Once any dust has been removed from the charcoal, place the steak directly on the coals. Grill for 1 - 1 1/2 minutes per side, flipping once.
  • 4. Remove from the grill, cover with a resting blanket and rest for 20 minutes before slicing and serving.
