Corsican Cheesecake

This recipe is crustless, light and fluffy!


  • 8 eggs
  • 1 1/3 cups sugar
  • 1 pound ricotta
  • 1 pound softened cream cheese
  • 1/2 cup cornstarch
  • 2 tablespoons lemon zest
  • 1 teaspoon vanilla extract
  • 1 teaspoon kosher salt
  • Butter, for greasing pan


  • 1. Preheat the EGG to 350° using indirect heat. Whisk eggs and sugar in a bowl until pale and lightly thickened, about 2 minutes. In a separate bowl, blend the cream cheese and cornstarch until well blended. Add the ricotta cheese, zest, vanilla, and salt; whisk until smooth. Add the cream cheese mixture and blend until smooth. Pour into a greased 9″ x 13″ glass baking dish, and bake until light golden on the top, about 35 minutes. Let cool before cutting into squares to serve.
