Coconut Panna Cotta

Nutritional Information

Panna cotta is an Italian dessert, but this recipe is made with coconut milk, giving it a rich flavor and velvety texture.

Ingredients

  • 4 cups coconut milk
  • 1/2 cup sugar
  • 2 teaspoons vanilla extract
  • 2 packets powdered gelatin
  • 6 tablespoons coconut milk
  • pear wood, for smoking if desired
  • cornmeal shortbread cookie, see recipe
  • marinaded limes, see recipe

Directions

  • 1. Preheat EGG to 225º using indirect heat and the pear wood if desired.  In a grill safe metal pan add the 4 cups of coconut milk.  Smoke for about 5-10 minutes, or until desired smoke flavor is achieved.
  • 2. While coconut milk is still hot add the sugar, whisking constantly to dissolve.  If it hasn’t dissolved all the way, return to the heat and whisk constantly until completely dissolved.
  • 3. Add the gelatin to the remaining coconut milk.  Once it has seized up, place it over a double boiler.  Continuously stir until all the gelatin is dissolved, adding some of the smoked coconut mixture if needed to thin it out.  Once it is dissolved add the gelatin mixture to the smoked coconut cream and mix well.
  • 4. Put into greased dishes and refrigerate for at least 4-6 hours.  If you let it sit over night, the smoke flavor will increase, so if you do not want this serve the same day.  If you need to make it ahead of time, go a little lighter on the smoke intensity and you should be fine.  Serve with shortbread cookie and marinated limes.
