Coco Bread

Nutritional Information

Coco bread is a bread made in the caribbean. It is traditionally made with coconut milk.

Ingredients

  • 1/2 ounce yeast
  • 1 teaspoon sugar
  • 1/4 cup warm water
  • 1 medium egg
  • 1 cup warm coconut milk
  • 1 teaspoon salt
  • 3 1/2 cups all purpose flour
  • 1/2 cup melted butter

Directions

  • 1. Mix the yeast, sugar and water together. Beat the egg and stir in to the mixture. Stir in the milk and salt and mix well. Then stir in 2 cups of the flour. Slowly add more flour, stopping when the mixture becomes stiff.
  • 2. Knead the dough until it is smooth which should take a few minutes if using a mixer or up to 10 minutes if doing by hand. Transfer the dough to a clean bowl and some of the melted butter. Roll the dough around the bowl until it is entirely coated in butter.
  • 3. Cover with a damp towel for 1 hour to allow it to rise.
  • 4. Divide the dough in to 10 pieces and roll each piece in to a circle, about 1/2 cm thick.
  • 5. Brush the dough with melted butter then fold in half.
  • 6. Preheat the Egg to 425 degrees using indirect heat. Place folded pieces on a well greased sheet and bake until golden brown, about 15 minutes.
