Chorizo Chili

This chili is a blend of chipotles, chorizo, black beans and lime.

Ingredients

  • 2 chipotle chiles canned in adobo, chopped
  • 2 1/2 cups chopped onion, divided
  • 1 1/2 cups green bell pepper, chopped
  • 1 1/2 cups yellow bell pepper, chopped
  • 5 cloves garlic, chopped
  • 8 ounces spanish chorizo
  • 1 1/2 tablespoons chili powder
  • 1 tablespoon ground cumin
  • 1 1/2 teaspoons dried oregano
  • 1 tablespoon lime juice
  • 1/8 teaspoon ground cinnamon
  • 45 ounces black beans
  • 42 ounces whole peeled tomatoes, chopped
  • 8 ounces corn off the cobb
  • 1 1/2 ounces unsweetened chocolate, chopped
  • 3/4 teaspoon salt
  • 1/2 teaspoon black pepper
  • 3/4 cup sour cream

Directions

  • 1. Preheat the Egg to 400º using indirect heat. Preheat a cast iron dutch oven. Add chiles, 1 3/4 cups onion, bell peppers, garlic, and chorizo; sauté 5 minutes or until tender. Add chili powder and next 7 ingredients (chili powder through corn), stirring to combine. Bring to a boil. Simmer, covered, 30 minutes, stirring occasionally. Remove from heat; stir in chocolate, salt, and black pepper. Serve with sour cream and chopped onions for garnish.
