Chopped Greek Salad

Nutritional Information

A light salad that is full of flavor.


  • 3/4 pint cherry tomatoes, quartered
  • 1 each english cucumbers, seeded, and thinly sliced
  • 1 each small red onion, thinly sliced
  • 1/2 cup pitted kalamata olives, quartered
  • 1 head romaine lettuce, thinly sliced (shredded)
  • 5 each fresh mint leaves, thinly sliced
  • 1 teaspoon dried oregano
  • 3 ounces crumbled feta cheese
  • 4 tablespoons extra virgin olive oil
  • 2 tablespoons fresh lemon juice
  • to taste kosher salt
  • to taste fresh ground pepper


  • 1. In a large bowl, combine the tomatoes, cucumbers, olives, red onions, romaine, mint, dried oregano, olive oil and lemon juice. Toss to combine thoroughly. Season to taste with salt and ground black pepper. You can also add more olive oil and lemon juice to taste. Evenly sprinkle crumbled feta cheese over top. Serve.
