Chocolate Verrine

This verrine, or layered dessert can be made ahead of time and is perfect for parties.

Ingredients

  • For the Cremeaux:
  • 4 ounces 65% chocolate
  • 3 ounces milk chocolate
  • 1/2 tablespoon gelatin powder
  • 2 1/2 ounces water
  • 3/4 teaspoon agar agar
  • 14 ounces heavy cream
  • 2 1/2 ounces corn syrup
  • For the Mousse:
  • 12 ounces 65% chocolate
  • 6 egg yolks
  • 2 1/2 ounces sugar
  • 2 ounces heavy cream
  • 3 1/2 cups heavy cream
  • 3/4 tablespoon powdered gelatin
  • Caramel Sauce:
  • 2 1/2 cups sugar
  • 2 cups heavy cream
  • 1 ounce butter

Directions

  • 1. Measure chocolate and set aside. Bloom gelatin in 3/4 ounce of water.
  • 2. Bring water and agar to a low boil for 1 minute, set aside.
  • 3. Bring cream and corn syrup to a boil, whisk in water/agar.
  • 4. Mix in the chocolate and gelatin. Puree with a blender or food processor until smooth.
  • 5. Pour into glasses and allow at least 6 hours to set, preferably overnight.
  • 6. For the Mousse:
  • 7. Melt chocolate, set aside.
  • 8. Whisk yolks and sugar until very pale yellow and thickened. (ribbon stage)
  • 9. Bloom gelatin in 1 1/3 ounces of water. Add 2 oz. heavy cream and melt.
  • 10. Whisk chocolate into yolks and sugar mixture, add cream and gelatin mixture.
  • 11. Stream in remaining heavy cream and whisk until you can lift a spoon or spatula out of the batter and it falls in ribbons or smooth sheets that will hold their shape momentarily before falling into the batter. (ribbon stage).
  • 12. Pour over cremeaux in glasses and allow 3 hours to set.
  • 13. Make a dry caramel by only melting the sugar in a sauce pot, until it is a caramel brown color. Making sure it does not burn.
  • 14. Whisk in heavy cream slowly. BE CAREFUL! Adding the cream will cause it to steam quite a bit.
  • 15. Add butter and serve with cremeaux.
