Chocolate Beet Cake

Before you scroll past this recipe, give it a shot. Yes cooking with chocolate and beets create a perfect pairing, and if you don't tell them there are beets in this delicious cake, they will never know!


  • 1-2 large red beets
  • coarse salt
  • 1 ounce unsweetned chocolate, chopped
  • 1 1/4 cup all purpose flour
  • 1/2 teaspoon baking soda
  • 1 1/2 cups sugar
  • 1 egg
  • 6 tablespoons vegetable oil
  • 1 teaspoon vanilla extract
  • whipped cream, for serving
  • chocolate sauce, for serving


  • 1. Heat the EGG to 425°F using indirect heat. Trim the tops from the beets, leaving about 1 inch of the stems. Tear off a large piece of aluminum foil and make a small bed of coarse salt in the center. Set the beets on the salt, wrap the foil to make a tight package, and roast the beets until very tender, about 1 hour.
  • 2. Let the beets cool. Peel them and cut them into chunks. Put them in a food processor and process to a very fine puree. Measure out ½ cup.
  • 3. Heat the EGG to 350°F using indirect heat. Spray muffin pans.
  • 4. Melt the chocolate using a double boiler. Whisk the flour, baking soda, and 1/8 teaspoon salt together in a bowl. Put the sugar, egg, and oil in the bowl of a standing mixer fitted with the whisk. Whisk for 2 minutes at medium-high speed, until pale and light.
  • 5. Beat in the vanilla extract, then the dry ingredients, then the chocolate, then the beet puree, mixing well after each addition. Scrape the batter into the pan and tap it on the counter to remove air bubbles.
  • 6. Bake until a knife comes out clean, 12-15 minutes, rotating the pan after 8 minutes. Be careful to not over bake or the cakes will collapse. Let cool for a few minutes before removing the cakes from the pan. Serve with whipped cream and chocolate.
