Chicken and Dumplings

Ingredients

  • For the Dumplings:
  • 1/2 cup unsalted butter
  • 2 1/2 cups all purpose flour
  • 3/4 tsp baking powder
  • 1 tbs fresh chives, minced
  • 3/4 cup buttermilk
  • 2 whole eggs
  • 1/2 cup green onions, chopped
  • 1/4 cup feta cheese
  • For the Stew:
  • 3 tbs unsalted butter
  • 3 tbs all purpose flour
  • 72 ounces chicken stock
  • 3 large onions, finely sliced
  • 3 medium carrots, medium chopped
  • 4 medium celery ribs, medium chopped
  • 1 1/2 pounds cooked chicken, medium cubed or shredded

Directions

  • 1. For the Dumplings:
  • 2. Melt the 1/2 cup measurement of butter. Combine 2 1/2 cups of flour, baking powder,chives, green onions, feta, 1/2 teaspoon of salt and ground black pepper in a medium bowl. Combine the buttermilk, eggs and butter in another bowl. Pour the buttermilk mixture over the flour mixture and stir with a wooden spoon until it forms a shaggy-like dough. Set aside.
  • 3. For the Stew:
  • 4. In a large dutch oven or saucepan over medium-high heat (325 degrees fahrenheit on the EGG set up for indirect heat), melt 3 tablespoons of butter. Add the 3 tablespoons of flour and cook, stirring constantly until the mixture becomes a pale golden brown, about 3 minutes.
  • 5. Slowly whisk in the chicken stock. Add the onions, carrots and celery.
  • 6. Bring to a simmer and let cook, stirring occasionally, until the vegetables are softened, about 10 minutes.
  • 7. Stir in the chicken and season to taste with salt and ground black pepper. Keep the stew at a bare simmer.
  • 8. Using a tablespoon measure, drop dumpling dough in 1-inch balls over the surface of the stew. Cover and cook until the dumplings have puffed and feel firm to the touch and a toothpick inserted into the center of one of the dumplings comes out clean, about 15 minutes. Serve immediately
