Cherry Clafoutis

Nutritional Information

Clafoutis sometimes in Anglophone countries spelled clafouti, is a baked French dessert of fruit, traditionally black cherries, arranged in a buttered dish and covered with a thick flan-like batter. The clafoutis is dusted with powdered sugar and served lukewarm, sometimes with cream.

Ingredients

  • 2 pounds fresh, frozen or canned black cherries
  • 7 each California Fresh Eggs
  • 1 cup sugar
  • 1/2 teaspoon salt
  • 1/2 tablespoon vanilla extract
  • 1 cup flour, sifted
  • 2 cups non-fat evaporated milk

Directions

  • 1. Pit the cherries, or drain the canned cherries, or thaw the frozen cherries. In a bowl, beat the eggs as for an omelet, add the sugar, salt and vanilla extract. In another bowl, put the sifted flour, add the eggs and mix well, add the non-fat evaporated milk. Spray a baking dish with vegetable oil, add the cherries, pour the batter over.
  • 2. Preheat EGG to 400° using indirect heat, plate setter and a stainless steel grate. Bake Clafoutis for 30 min or until a knife inserted into the clafoutis comes out clean.
