Cheese Muffin

These savory muffins make a great appetizer or snack.


  • 1/3 cup olive oil, plus 1 tablespoon
  • 2 each serrano chiles, thinly sliced
  • 1 1/2 cups all-purpose flour
  • 5/8 cups cornmeal
  • 1 tablespoon baking powder
  • 1/8 teaspoon cayenne
  • 1 3/4 cups milk
  • 2 each large eggs, lightly beaten
  • 1 1/2 teaspoons pure maple syrup
  • 9 ounces grated sharp chedda cheese


  • 1. Preheat EGG to 350degrees F, using indirect heat, a plate setter and a stainless steel grate.
  • 2. Grease a standard muffin tin and set aside.
  • 3. In a large bowl, whisk together the olive oil, serrano chiles, all purpose flour, cornmeal, baking powder, and cayenne. Set aside.
  • 4. In a medium bowl, whisk together the milk, eggs and maple syrup. Add the wet ingredients to the dry ingredients and mix together using a wooden spoon. Fold in the cheddar cheese.
  • 5. Evenly distribute the batter into the muffin tins. Bake for 15-20 minutes or until a toothpick inserted in the middle of the muffin comes out clean. Remove from the EGG and serve hot.
