Ceviche Tostadas with Avocado Cream

While not a traditional ceviche, grilling all your components will add quite a bit of flavor.
Ingredients
- 1 each Large shallot
- .25 each Red onion
- 1 each jalapeno, or more depending on how spicy you want it
- .5 each red bell pepper, seeds and ribs remove
- 1 each poblano chiles, seeds and ribs remove
- .5 bunch cilantro
- 1/4 cup freshly squeezed lime juice
- 1 teaspoon sea salt
- 1 teaspoon freshly ground black pepper
- 6 tablespoons extra virgin olive oil
- 1 1/2 lbs. shrimp
- 12 each corn tortilla, baked
- Avocado Crema:
- 1 each avocado, grilled and smashed
- 1 cup sour cream
- 2 tablespoons lime juice
- salt and pepper, to taste
Directions
- 1. Brine your shrimp for 15 minutes in basic brine (recipe on website). Remove from the brine and season with salt and pepper.
- 2. Grill the shrimp, shallot, red onion, and peppers until just charred. Dice all vegetables and combine with remaining ingredients.
- 3. Serve on top of tortillas and top with avocado cream.
