Carrot and Onion Pickles

Nutritional Information

This recipe calls for carrots and onions, however any vegetable can be used.


  • 1 cup shredded carrots
  • 1/2 cup thinly sliced onion
  • 1/2 cup mirin
  • 1/2 cup rice wine vinegar
  • 1 tablespoon sambal olek
  • 1 cup water
  • 2 tablespoons kosher salt
  • 1 whole chili pepper, sliced thin
  • 2 cloves garlic, sliced


  • 1. Combine all ingredients except carrots and onions and bring to a simmer. Pour hot liquid over veggies and refrigerate for 4 hours before serving.
