Caponata is a Sicilian dish, and is typically made with eggplant, olive oil and herbs.


  • 2 pounds mahi mahi
  • basic brine, see recipe
  • 2 pounds eggplant, sliced
  • olive oil, as needed
  • 1 large yellow onion, halved
  • 1 rib celery
  • Kosher salt and freshly ground black pepper, to taste
  • 3 tablespoons tomato paste, thinned with 1/4 cup water
  • 1 cup crushed tomatoes
  • 6 ounces green olives, pitted and roughly chopped
  • 1/2 cup white wine vinegar
  • 1/2 cup golden raisins
  • 1/4 cup capers, rinsed and drained
  • 3 tablespoons sugar
  • 1/2 cup finely shredded basil
  • 2 tablespoons pine nuts


  • 1. Preheat EGG to 400º using direct heat and a cast iron grate. Grill the eggplant until slightly charred. Remove from the heat and chop.
  • 2. In a saucepan, add the oil. Once hot, add onions and celery and season with salt and pepper; cook, stirring often, until they begin to brown. Reduce the heat and add tomato paste and cook, stirring until caramelized and almost evaporated. Add crushed tomatoes and cook for 10 minutes. Stir in olives, vinegar, raisins, capers, sugar and cook, stirring occasionally, until thickened, about 15 minutes. Transfer to bowl with the grilled eggplant, along with basil and pine nuts, and mix together. Season with salt and pepper, and let cool to room temperature before serving.
  • 3. Brine the mahi mahi for 45 minutes. Remove from the brine and season with salt and pepper. Preheat the EGG to 450º using direct heat. Grill for 2-3 minutes per side, or until the fish begins to flake.With the Egg preheated to 350ª using indirect heat, preheat a cast iron dutch oven. Saute the peppers until they begin to soften. Add the liquid and once it begins simmer add the couscous and the pesto. Stirring often. Cover it with the lid, remove from the heat and wait 5 minutes. Remove the lid and fluff with a fork. Season to taste and serve.
