Butternut Squash Puree

Nutritional Information

Butternut squash has a naturally creamy texture.


  • 2 medium butternut squash, peeled
  • 2 tbsp unsalted butter, melted
  • 1 tbsp olive oil
  • coarse salt and freshly ground pepper
  • 2 tbsp honey
  • pinch of freshly grated nutmeg


  • 1. Preheat Egg to 350ºF with platesetter for indirect heat. Place squash in a large shallow baking dish. Drizzle with butter, and toss to coat. Cover with foil. Transfer to the Egg, and cook until tender, 25 to 30 minutes. Season with salt and pepper.
  • 2. Using an immersion blender or working in batches in a blender, puree squash until smooth. Stir in honey, salt, and nutmeg.
