Buttermilk Dijon Potato Salad

The buttermilk and Dijon mustard make this roasted potato salad tangy and creamy.


  • 3 pounds small white potatoes
  • 1 cup mayonnaise
  • 1/4 cup buttermilk
  • 4 tablespoons Dijon mustard
  • 1/2 cup chopped fresh cilantro
  • 1/2 cup chopped celery
  • 1/2 cup chopped red onion
  • to taste kosher salt
  • to taste fresh ground black pepper
  • as needed vegetable oil


  • 1. Preheat EGG to 375 degrees F, using indirect heat and a stainless steel grate.
  • 2. Grease a baking pan and set aside.
  • 3. Quarter the potatoes and place in a large bowl. Coat the potatoes with oil and season with kosher salt and fresh ground black pepper. Spread the potatoes onto the greased baking pan in one layer.
  • 4. Roast the potatoes for 30 minutes or until fork tender. Remove from the EGG and place potatoes in a large bowl.
  • 5. To the potatoes, add the mayonnaise, buttermilk, Dijon mustard, cilantro, celery and red onions. Toss to combine thoroughly. Season to taste with kosher salt and fresh ground black pepper. Serve hot or warm.
