Brussels Sprout Salad

These brussel spouts are roasted and tossed with a blue cheese dressing.


  • 3 pounds brussels sprouts, trimmed and quartered
  • 1 1/2 apple, skin on, cored, cut into quarters
  • 3 tablespoons shallots, finely chopped
  • 3/4 cup walnuts, roughly chopped
  • For the Dressing:
  • 1/2 cup blue cheese
  • 1 cup plain Greek yogurt
  • 1 tablespoon white vinegar
  • 1/2 tablespoon honey
  • 1/4 teaspoon freshly cracked black pepper
  • salt to taste


  • 1. Preheat the Egg to 400º using direct heat and a cast iron grate. Grill the apples for 2-3 minutes on the cut side until char marks form. Remove from the grill and dice.
  • 2. Convert the Egg to indirect heat and raise the temperature to 425. Toss the brussel spouts with salt, pepper and oil. Roast until fork tender. Cool slightly.
  • 3. In a large salad bowl, combine Brussels sprouts, apple, shallot and walnuts.
  • 4. Prepare the dressing. Combine all the ingredients in a blender. Blend until smooth. Adjust seasoning if needed.
  • 5. Pour dressing over the salad and toss to coat. Serve immediately.
